our favorite breakfast

I probably make this easy & delicious breakfast about 2 times a week. It is that good... and that easy.

Banana Yogurt Pancakes

Ingredients:

  • 1 egg, lightly beaten
  • 2/3 cup plain or vanilla whole milk yogurt (we love Brown Cow), anything not light
  • 2/3 cup milk (we also use whole)
  • 3/4 cup self-rising flour
  • 1/4 tsp sea salt (optional) or 2 tbsp pure maple syrup for a sweeter version (optional)
  • 1/2-1 semi mashed banana
  • vegetable oil for frying


Directions:

  1. mix together the beaten egg and the yogurt, then stir in the milk, four, and the optional salt or maple syrup. mix until you have smooth batter. 
  2. heat a little oil in a skillet until sizzling hot. drop heaping tablespoons of batter into the pan, leaving plenty of space around each one, and flatten slightly with a spatula. cook for 1-2 minutes until lightly browned, then turn and cook further for another 1-2 minutes, until set in the center. 
  3. drizzle with pure maple syrup and/or serve scattered with fruit (we like peaches and blueberries).

sounds delish! if i can ever get my kids to eat something other than oatmeal and bananas for breakfast, i'll have to give this a try. :)

i have been trying to get arlo to eat oatmeal and cream of wheat since he was starting solids, he has never liked it or eaten more than 2 bites of it at a time! i wish he would!
